Olive Oil Sommelier Course In Tuscany
IRVEA’s Professional Olive Oil Sommelier course is not an ordinary olive oil taster course whose name has been changed: it is a theoretical and practical course aimed at food lovers, olive oil tasters, gourmets, cooking enthusiasts and professionals to discover the EVOOs of excellence, “from the land to the plate.”
We do not train simple olive oil tasters, but experts with a well-rounded knowledge of EVOO: professionals with specific skillsproduction techniques, sensory analysis for the classification and selection of EVOO oils.
These highly qualified professionals are at the service of consumers, retailers and restaurateurs for the correct communication and choice of EVOO in all its forms, in its different uses and pairings with food, in the kitchen, on the table and in catering.
The journey into flavors and products begins in the superb example of Renaissance architecture of Pienza, a town located in the Val d’Orcia, in the southern part of Tuscany.
The program also includes afternoon activities:
Guided tasting and practical perception tests for the Sensory Aptitude Certificate of more than 60 olive oils of various international origins and their different characteristics by variety, harvest period and extraction techniques.
Masterclass on pairing with wines, cheeses and artisanal cured meats, olive oil tasting and food pairing.
Visit to wineries and vineyards in the Montalcino area, where we will indulge in a guided wine tasting; visits to the olive grove and olive press.

Upon enrollment, IRVEA-Olive Oil Academy will send a confirmation email and issue an identification code to take advantage of the special rates and conditions for the rooms that the Hotel San Gregorio has made available for the participants to the Olive Oil Sommelier-Food & Wine Experience Course.
In order to guarantee the availability of rooms at the Hotel San Gregorio, it is advisable to book them at the time of pre-registration.
