The Olive Oil Sommelier course that IRVEA- Olive Oil Academy has been organizing annually since 2004.
A course is open to gourmets, olive oil tasters, food and olive oil enthusiasts and also to professionals from various olive oil sectors.

This Olive Oil Sommelier course teaches participants how to professionally taste, evaluate and classify olive oil and above all, the correct combination of olive oil with different food and dishes.

The course consists of five days of lessons with practical tests, organoleptic sensitivity tests and guided tastings of more than 60 different olive oils of various international origins, varieties and extraction techniques.

Course Content

An innovative format to help you learn everything about olive oil; from its different uses and combinations in the kitchen and on the table.

The course will also cover the “alternative use” within an infinite number of other food sectors and more. It is an educational and informative holiday for those who want to deepen their knowledge of olive oil and all its aspects, “from the earth to the plate“.

Autumn is the perfect time to discover Tuscany, its smells and flavors of freshly squeezed olive oil.

This course is a combination of classroom lessons and olive oil tastings, Food Pairing Masterclasses, visits to wineries, wine, charcuterie and new olive oil tastings and evenings spent discussing all things olive oil and food.
Experience the olive harvest, the processing at the mill and finally the tasting of the new olive oil just out of the mill in front of you.
